Leek Muffins

Try this tasty and easy recipe! You can pack these delicious muffins and have them with you wherever you go!

Makes 4 muffins.

Ingredients:

50g of roughly chopped leak

100g ricotta

2 eggs

2 tablespoons almonds

1 tablespoon grated Parmesan cheese

salt

Instructions:

Mix the eggs, ricotta, leek, almonds, parmesan and salt in a bowl. Fill the mix into muffin cups and bake in the oven at 180 ° C for 20 minutes. A great, high-protein meal to pack as a snack. The leek can be replaced with spinach or swiss chard.
